Around every campfire comes a round of good stories. This tradition continues with our restaurants.

Our Bar-BQ tells the story of Central Texas farmers, ranchers, and butchers: Beef Ribs (brisket), sausage, and bacon are the three essential ingredients to this type of Bar-BQ. Jared Leonard, founder of AJ's Pit Bar B Q, has been telling this story since 2009 and we are excited to share our passion with Evergreen neighbors.

Our rotisserie & grill speaks to our desire to showcase simple ingredients, in a method that lends opportunity for deeper character, and bold flavors. Wood fire cooking offers a unique flavor profile.

Our wood-fired pizza is cooked in an oven that was handcrafted in Italy, by the Acunto family. The Acuntos have been making these pizza ovens since 1892. They are considered the industry's best. This original method of building these ovens by hand has been passed down to the present day. Bryan Rosen, a certified pizzaiolo, was trained by masters in Italy and will be leading the wood-fired program at Campfire.

About Evergreen

In botany, an evergreen is a plant which has foliage that remains green and functional through more than one growing season. This also pertains to plants that retain their foliage only in warm climates, and contrasts with deciduous plants, which completely lose their foliage during the winter or dry season. == Evergreen species == There are many different kinds of evergreen plants, both trees and shrubs. Evergreens include: Most species of conifers (e.g., pine, hemlock, blue spruce, and red cedar), but not all (e.g., larch) Live oak, holly, and "ancient" gymnosperms such as cycads Most angiosperms from frost-free climates, such as eucalypts and rainforest trees Clubmosses and relativesThe Latin binomial term sempervirens, meaning "always green", refers to the evergreen nature of the plant, for instance Cupressus sempervirens (a cypress) Lonicera sempervirens (a honeysuckle) Sequoia sempervirens (a sequoia)Leaf longevity in evergreen plants varies from a few months to several decades (over thirty years in the Great Basin Bristlecone Pine). === Evergreen families === Japanese umbrella pine is unique in that it has its own family of which it is the only species.
